Last minute St. Patrick’s Day cookies

Here I am again, coming to you live on the actual holiday to make a quick cookie presentation. I made these St. Pat’s themed cookie boxes to accompany made-to-order cookie items for a my daughter’s school auction.

I also made a couple of cakes (not pictured) with plenty of taste tests along the way (don’t tell my long ago donated bikini).

Shamrock snowflake cookies

Somewhere very close to where I live, about and hour or so up, there’s still snow enough to ski, snow enough to walk lightly on snowshoes through the hush of a forest at night. Recent temperatures in the 50’s feels near balmy and it’s drawn people to tap their springtime dreams with a weekend spent clearing fallen brown pine needles from lawns and biking to the coffee shop near the park.

But for a group of 12 who remember that winter still thrives in higher elevations, a winter picnic and evening hike are on the agenda. These cookies were made to provide a (lucky) sweet ending to a sunset walk in the snow and to winter activities winding down for the season. A nod to the glistening magic of snow and its sliding, slippery recreational qualities, before we turn toward the sun and fields of grass green and dry enough for soccer games, tag and the lazy joy of spectating.

Irish hearts and St. Pat’s odds ‘n ends

Here’s the last few cookies that made their way into my St. Pat’s themed cookie basket.  This week, other obligations have kept me from my cookie decorating dreams, and it’s killing me!  Hopefully, I can get to something new and spring-like this weekend….

For this set, I played around with common images for shamrocks and their flowers.

The Irish hearts were based on the simplest Celtic designs I could find.

And red – green’s complementary color – was added for love and balance.  Also, it’s my favorite color, so it’s hard to leave that Super Red food color bottle alone.  (:

Luck with shamrock pops

Everything’s coming up…shamrocks! Here’s a few from a cookie basket I did for a charity auction last week.

My husband was gone skiing with the “bigs,” and the “littles” were home with me. In my typical last-minute fashion, I needed to wait until the early afternoon to ensure the icing was dry enough to package and arrange the cookies in the basket. Of course, there were whirlwind pictures to take before breaking out the cellophane and ribbon, which pushed things back a bit more. When the delivery window before the auction narrowed to the smallest sliver of time, I called for reinforcements to avoid a cookie malfunction with a newborn and a toddler in a snowy parking lot.

Fortunately, my cousin, Steve, swooped in, picked up and delivered the cookies for me. And somewhere in the middle of all that, he shoveled my front walk. And I’ve been thanking my lucky shamrocks ever since!

Do leprechauns diet?

Something tells me they might. You know, because they’re so clever and always finding that elusive gold at the end of the rainbow. That  gold must buy a lot of soda bread and corned beef. Oh, and beer.

Of course LBS (Leprechaun Busy Season) is almost upon us and it  is definitely not the time of year for leprechauns to worry about such things, with all the exercise the green guys will get from their mischievous antics ahead.  They’ll be moving around enough tinting milk green and turning over toy boxes, to earn those calories and to keep that notch in the belt precisely where it is, thank you very much.

If only the rest of us could be so fortunate. Especially when one insists on making a boat load of St. Patrick’s Day cookie pops and munching on the mistakes….

For these cookies, inspiration struck again at Target (see Bake and 350’s sweet Valentine sock cookies, inspired from a card) – strangely enough – in the form of a sock. Who knew? No need to keep your amulets, rabbit feet and high school rings. Socks are the new lucky charm!
